The 1987 Bruntland Commission Report described the concept of sustainable development as “development that meets the needs of the present without compromising the ability of future generations to meet their own needs”.


Food sustainability and the supply chain of food touches on all four pillars of sustainability: human, social, economic, and environmental. SDGs in catering cover all aspects of the food chain and all pillars of sustainability. Food plays vital parts to human health, culture and economy but food production and consumption has a significant impact on the earths health. The main factors being land and water usage, deforestation, greenhouse gas emission, biodiversity loss and impact of chemical products (i.e. pesticides).
